Program Overview
This structured program provides aspiring cake designers and baking enthusiasts with professional training in cake baking, assembly, and decoration. Combining theoretical knowledge with hands-on practice, you’ll gain the skills, techniques, and confidence to create professional-quality cakes for events, clients, or personal projects.

The final week covers madeleines, éclairs with fillings and glazes, mille-feuille assembly, and fruit tarts with marinated fruits. Students will also practice glazing, caramelization, and finishing. The program concludes with a final project: preparing a French pastry buffet to demonstrate all techniques learned.
