Program Overview
This structured program is designed to provide aspiring pastry chefs with comprehensive training in the fundamentals of French pastry arts. 


Through hands-on practice and expert guidance, participants will learn essential techniques and gain confidence in creating a variety of classic and contemporary pastries.

Who Is it For

Aspiring pastry chefs, culinary students, entrepreneurs, and passionate food lovers who want structured, professional training.

  • Students will explore the importance of ingredients such as flour, butter, eggs, and yeast. They will practice scaling, mixing, kneading, and resting techniques. Recipes will include shortcrust pastry (pâte brisée), sweet pastry (pâte sucrée), and savory quiche bases. The goal is to master consistency and dough texture.

  • This week focuses on whisking, emulsifying, and tempering techniques. Students will prepare pastry
    cream (crème pâtissière), Chantilly cream, and basic ganache. Applications will include fruit tartlets and
    cream-filled choux. Basic piping skills and decoration will be introduced.

  • Students will study lamination, folding, rolling, and fermentation. Recipes will include croissants, pain au chocolat, and brioche. The focus will be on mastering proofing and baking to achieve light and airy textures.

  • The final week covers madeleines, éclairs with fillings and glazes, mille-feuille assembly, and fruit tarts with marinated fruits. Students will also practice glazing, caramelization, and finishing. The program concludes with a final project: preparing a French pastry buffet to demonstrate all techniques learned.

Assessment & Certification

Students will be continuously evaluated through practical performance. The final week will include an individual presentation of their pastry creations. Successful participants will receive a Certificate – French Chef Pastry Level 1.
